Lots of choices. We usually have squash stuffed with aromatic rice, quinoa, corn & other good things (which is what I'll be preparing shortly in fact), along with most of the traditional side dishes: yams, cranberry sauce, rolls, @ least 1 green veggie, & whatever meatless goodies that I get requests for. Plus dessert-- this year my SO got a pie but we usually have pumpkin muffins made without milk or egg.

I made this: http://vegweb.com/index.php?topic=8979.0 but with tempeh instead of tofu. I also kept the wild rice mixture I had separate from the tempeh mixture. It was pretty good.

VegWeb also has a tempeh "pot roast" type dish.

You can go to http://www.veganlunchbox.com/loaf_studio.html and select ingredients for your own veggie loaf.

Make some stuffing, some gravy, some veggies, cranberry sauce, and pumpkin pie, and you've got yourself quite a dinner.
