Its the consistency and meat used. Both are smoked.
Polish sausage is finely ground even consistency and juicy.
Kielbasa has chunks of ham blended in and it is more dense, less juicy and more often that is eaten as a cold cut or cold in chunks and polish sausage is eaten hot as a wurst type side dish or on a bun.
