Those are your options. None of that made up "I eat fish but I don't eat gelatin or steak on tuesdays" crap.

Lemme break it down for you.

Meat = animals. Animals are anything that used to breathe, poop, have a mother, lay eggs, have live births, and so on. Fish are animals. Birds are animals.

Vegetarians, at minimum, don't eat ANY animals nor their random parts that they have to die to provide (i.e. gelatin.)

Lacto vegetarians: Consume milk but not eggs.
Ovo vegetarians: Consume eggs but not milk.
Lacto-Ovo vegetarians: Consume milk & eggs.
Strict vegetarians: Do not consume ANY animal products. Some call this "following a vegan diet." No eggs, no milk, no honey.
Vegan: Strict vegetarian diet (see above), but also extends to lifestyle. No leather, beeswax, suede, wool, fur, lanolin, carmine, cochineal, silk, or any other animal part or product in their consumables (i.e. shampoo, make up, cleaning products, and so on.)

We eat everything that anyone else eats, minus the meat (and a few slaughter byproducts like gelatin.) That means we can eat all your normal dishes like tacos, spaghetti, soup, casseroles, salads, pizza, etc... either with no meat or with a meat substitute. I'm vegan so I've also cut out eggs, dairy and honey. But I still eat vegan versions of familiar foods. Last night I had chili with cornbread. The night before I had vegetable stir fry with soy "chicken" strips. The night before I made enchiladas stuffed with potato, kale and garlic. Nobody could possibly list all the things a vegetarian eats, any more than they could list all the things you eat.

I am a vegetarian. I eat vegetables, grains, nuts, everything a regular meat eater would eat, but MEAT!!!
