The shell is the logo for Shell gasoline.
It lives in the sea and harvested on both the East and West Coast.
It has a sweet flavor when eaten raw, but normally prepared in many ways in a restaurant.
It is opened with a knife like oysters or clams.
It continually filters water in the sea so it is considered good for the enviornment.
I like the small variety.

There are two types of scallops, the bay scallop and the sea scallop.
Bay scallops, found in the bays from the New England area down to the Gulf of Mexico. It small in size, about 1/2", with a slightly pink tint. They are sweet with a very mild flavor.
Sea scallops are much larger and are located in deep waters from Newfoundland to North Carolina. Sea scallops can be as large as 2". Sea scallops are sweet, but with a stronger flavor than bay scallops. The sea scallop shell is what we often think of as the classic shell shape. Shell oil uses the sea scallop shell as its emblem.
The calico scallop is sometimes available in stores.
I like to broil sea scallops topped with butter mixed with blood oranges. Very tasty!

Scallops can be prepared in different ways, including sauteing, grilling, baking. You should however take care not to overcook them, in order to keep the delicate texture and moisture.
