Here's a great website that has pictures on it to teach you, this way's pretty easy to. Scroll to about the middle of the page that's where they are.

White radish flower (Garnish) For a simple flower garnish cut paper-thin slices across the radish and soak them in salt water (1 tablespoon salt to 1 cup water) for 20 minutes. This makes the radish soft and pliable. Cut each slice from edge to centre, overlap edges and curve to form a cone. Do this with 7 slices. Curve the edge of the circle back to resemble the petal of a flower. Place petals one within the other.

There is no easy way. You need a small, very sharp knife and a steady hand. Make the slices as thin as you can, then soak in ice water until they open up.

A small sharp knife and a steady hand are the best way to do it. Soak them in cold water after and it will open them up . Practice and patients just keep trying it.

I don't think there is an easy way unfortunately. I think that the key is soaking them in water beforehand.
