The best way to cook a tofurky is to braise in a little bit of vegetable oil then add a liquid like a watery gravy and keep turning so you get a little brown on the outside. The gravy will thicken up as the tofurkey cooks. The method they recommend of wrapping in foil with marinade doesn't turn out as well . I haven't tried the microwave recipe so I can't tell you how that works out.

Seitan is fairly easy to make, if you get the vital wheat gluten or high gluten flour. Follow the instructions on the box, but do simmer the dough in a flavored broth, not plain water. "La Dolce Vegan" has recipes for simmering broths for your seitan.

I never cook my seitan the day I make it. I always let it sit in the fridge for at least a day. I actually make a double batch and freeze the other half, and that improves the texture.

The deli meats ones? I used to eat those and they were good. Tasted like meat. Put on some bread and grill it or toast in the toaster oven. You can also bake the slices.
