Vegans don't eat cheese.
The diet you describe is way too low in fiber-you need fruits and vegetables, whole grains like brown rice and whole wheat, and beans (navy, pinto, refried, baked, etc)
Vegetable protein come from combining grains with soy, legumes such as peanuts, or beans. Do a search for "complementary protein, vegetarian" and you will find plenty of information and recipes.

Eating too much cheese isn't a good thing because it can make you constipated haha. Also eating too much bread can cause you to gain a lot of weight. I am a vegetarian so it's hard for me to get in all my food groups daily. Nuts, peanut butter, protein bars, and vegetables are all good sources of protein.

Cheese is not eaten by Vegans. It is also not eaten by some vegetarians. The reason why? Cheese contains rennet, which is an enzyme from the stomach of a calf. However you can buy vegetarian cheese in most shops and supermarkets which doens't contain rennet.
Protein can be found in many other sources; tofu, lentils, soya, beans, chickpeas (pulses) and many vegetables. Try looking on www.vegsoc.org for inspiration and food recipies.

I think if you were going to have a cheese only diet you would get very tired of cheese, very fast.
If you are going for a vegan lifestyle, vegan cheese does exist, but I wouldn't recommend eating it only, or on an every day basis.
vegetable protein...
I personally eat 1 ouce(the amount if you take a shot glass and scoop out almonds) of unsalted raw almonds everyday for protein.

Cheese is a dairy product and not vegan. Beans and legumes are a good source of protein. And for your other question, cheese only diet will glog your arteries with cholesterol and make you fat.

If you eat cheese you may become constipated. This is so unhealthy. Vegan = vegetables & fruits. Eat those. For protein, try vegan crumbles or tofu type meat-like products. They contain a lot of protein.

Ew. You'll have some funky bathroom stuff going on if you eat that much cheese. Also, you'll be missing out on vitamins and minerals.
Better to just eat a wide variety of veggies and fruits and nuts and legumes.

Cheese is very healthy for you. As anything goes you have to eat it in moderation.
