Does anyone know the best meat to use to make beef stew,and how much in pounds will I need to make enough for 8 people?

I,ve always found slow cookers to slow for beef stew and dumplings I always make mine in a pressure cooker with dumplings added for last 20mins or so , on dumplings, replace half the flour with fresh white breadcrumbs and a little baking powder this will give you a lighter dumpling

yes, 1/4 lb per person of stewing steak with veg and a Coleman's casserole mix. cook in large pan, when cooked put into a roasting type tin. lovely. for your dumplings make golf ball size, and boil them in salted water until cooked then float them on top of your finished stew and put in to a hot oven to slightly brown the dumplings. beatiful, enjoy.

The advantage of this type of dish is that you can use the tougher cuts of beef because it's cooked slowly in liquid, which tenderizes it. The cheaper cuts are often very flavorful-bottom round, top round, arm, chuck, flank.
A quarter pound per person is a very generous allowance, since you will be cooking the meat with various other ingredients.

Stewing or braising steak, 2 and a half pounds will be enough, thats 6 oz a person.

Edit, sorry thats 3lbs, can't add up today.

I would use steak mince. The amount of meat you will need will depend on what other veg you are putting in there. If you are padding it out with carrots and peas etc. I would use about 2.5 pound of mince. What is left over can always be frozen. Dumplings are very filling as well.

skillet" with a small amount of evoo for a minute or so -
reserve the juices for the cooking of he "dumplings"

shin of beef simmer slowly for three hours about 3lbs let it rest
for a day then reheat the beef will be tender and moist not tough and ropey
