A lot of different peppers grow in the areas that have spicy foods, & they use what they have. It is as simple as that. Peppers are high in vitamin C, & make you sweat, & thereby cools you off. In the US some people make hot stuff just to show off!

Not all Mexican food is spicy. Depends on the condiments added to the plate. Most dishes have chili peppers and some hot s[pices added.
Southeast asians food is also spicy.
A legend says that because there was no refrigeration in Mexico, and food would spoil fast, they added heat (Hot chillies, peppers etc)...to kill the flavors of stale food or rotten meat. Or when they killed games, that would take away the bad smell and bad flavor of the meat ...

Well, not all mexican food is spicy . It depends what you eat and who makes it. But truth be told spicy is always good. Thats what salsas are for, incase the food is not spicy you have the option of spicing it up for your own taste.

Yes. The chile is the SOUL of mexican recipes.
Almost every dish involves some sort of chile:

Dried chiles, reconstituted by boiling in water, then blending in a blender to make a sauce/salsa.

Fresh chiles, chopped and added to a recipe, as a garnish, a condiment, or even whole, stuffed with meat or cheese.

Most cultures who live in a very hot climate developed a liking for spicy cuisine (if they had spices available). Many spices have antibacterial properties. (Not just the hot spices).
Prior to refrigeration, spicing food would have been beneficial to inhibit bacterial growth. I doubt people were explicitly aware of it, but the practice would have resulted in less illness and better survival of the group.

Some is but, Most Mexician food is NOT spicy. Many people think that the Tex-Mex food they get at the trendy restaurants is Mexician and it is not.

Most Mexician restaurants have mild & hot scauses on the tables, Look at salsa in the supermarket, it comes in mild and hot..........
