Canned yams. Butter. Cinnamon, pumpkin pie spice, all spice. I also have light Karo syrup, brown sugar, marshmallows and walnuts. I tried to make one last year but it fell far short of my expectations. Please, no other spices, I can't afford them.

This a favorite in our family, and my husbands work insists that i make it every year as well. You'll never make another Sweet Potatoe Casserole after making this. Cut Recipe in half if needed and use smaller pan. Best Wishes, I actuall stole this recipe from my husbands MeMa. I had it one year and am not crazy about sweet potatoes. This however is heavenly, or maybe sinful I dunno, just so good!

Sweet Potato Crunch
6 Cups of Mashed Canned Yams
1 1/2 cups sugar
1 tsp salt
4 eggs slightly beaten
5 Tbsp melted butter
1 cup evaporated milk (regular milk will work)
2 tsp vanilla
Mix all together Pour into greased 13x9 pan

Topping
Melt 5 Tablespoons Butter. Add 2 cups Brown Sugar, 2/3 cup all purpose flour, 2 cups Pecans or Walnuts Mix Well

Pour Topping over potato mix and cook at 350 for 30 minutes
P.s. Don't forget to drain yams

You have the perfect ingrediants for a sweet potato casserole! Here are some ideas:

Drain your yams and heat. Add brown sugar and butter and whip with mixer. Add about 1/2 to 1 tsp pumpkin pie spice and 1/8 tsp all spice. Place in greased baking dish and top with a mixture of butter, brown sugar and chopped walnuts. Sprinkle with marshmallows (cut if they are the large ones) and dot with butter. Bake until bubbling and marshmallows are golden.

Variation: to hot whipped mixture, add marshmallows and nuts. Spread in pan and dot with butter.

I think this meets your needs:

Sweet Potato Casserole

3 Cups mashed sweet potatoes
½ Cup white sugar
1 stick melted butter (margarine works just as well)
2 eggs
1 tsp vanilla

Mix well and put in dish. Top with:
¾ cup brown sugar
1/3 cup melted butter
1/3 cup flour
1 cup chopped nuts

Bake at 375 for 30 minutes.


I got this recipe from a former boss. I don’t normally care for sweet potatoes and I LOVE this.

Seriously the best way to do this is to start at the end and work your way to the beginning
When this product is finished what does it look feel and taste like ?
To my well educated culinary brain adding whipped egg whites to it and making a sweet potato mousse makes more sense because you would transform this overly sweet & overly dense product into something light and wonderful
Ground spices are best handled by dissolving them in a little liquid first ,making a slurry and then adding that slurry to,whatever
