These are relly yummy and a huge hit at every adult party I take them to. Get a number of Jalapeno Peppers, a block of cream cheese, and a pack of bacon. These 3 item is all you need. 5 bucks at the most. cut the steam off each pepper an take the seeds out. You can use a butter knife, you finger or a straw. once you gut the pepper stuff the inside with the cream cheese. Do not fill all the way to top , because you do not want it to be messy. Once you have it filled take a strip of bacon a nd wrap the pepper I use a tooth pick to keep bacon in place. Bake in the oven on 350 until the bacon is cooked 15-20 mins. You can stuff the night before and bake while you are getting dresses. These are great at room temp. I suggest making them 1 time before the party to ge the hang of them. I know it sounds tough so easy, cheap, fast and yummy! Good luck

Everytime I've made these, they are a hit!!!
Taco Pinwheels
4 ounces cream cheese, softened
3/4 cup cooked and drained seasoned taco meat (ground beef seasoned with taco seasoning)
1/4 cup finely shredded cheddar cheese
1/4 cup salsa
2 tablespoons mayonnaise
2 tablespoons chopped ripe olives
2 tablespoons finely chopped onion
5 flour tortillas (8 inches)
1/2 cup shredded lettuce
Additional salsa
In a small mixing bowl, beat the cream cheese. Stir in the taco meat, cheese, salsa, mayonnaise, olives and onion. Spread over tortillas. Sprinkle with lettuce; roll up tightly. Wrap in plastic wrap and refrigerate for at least 1 hour.
Unwrap and cut into 1-in. pieces. Serve with additional salsa. Yield: about 3 dozen appetizers.
(I didn't quite get 3 doz out of the receipe, but I have doubled the receipe for larger crowds).

Quesadillas are great, but if you don't want to be redundant try some unusual ones. Try Zucchini Blossom Quesadillas, Mango-Cheese Quesadillas, or Pear and Brie Quesadillas

You can buy sandwich rollups at grocery stores in the frozen foods section that are made with tortillas. I've used them several times for parties and people love them. You can make a pretty presentation on a platter, and all you have to do is open the package and arrange so they thaw out. Easy, quick, and inexpensive. Of course if you want to make them yourself, there are several recipes for rollup sandwiches.

- Buy puff pastry and wrap it around cocktail weiners
- Puff pastry wrapped around creamed spinach/broccoli/mushrooms
- Puff pastry wrapped around taco beef to dip in the salsa
- Tiny quiches or tomato tartlets
- Open face cocktail sandwiches - I know you said 'appetizers' but cucumber and salmon cocktail sandwiches are a staple of appetizer menus
- A sliced baguette or a selection of crackers and a selection of spreads - when I did this, I made red pepper hummus, olive tapenade, and guacamole
- Stuff mushroom caps with a mixture of half cream cheese, half parmesan, and a little bit of basil and oregano - bake for 15 minutes at 300 degrees
- Grilled shrimp on skewers or toothpicks, marinated in red wine vinegar and garlic

Make your own "roll-ups" :
Soften an 8 oz. pkg of cream cheese. Mix in some herbs that you like (basil, oregano, rosemary, etc.). Then spread a generous amount on several flour tortillas. Next lay on a piece of very thinly sliced ham. Roll up and cut into about 1" sections.
Easy and good!

Bacon wrapped chicken livers. (wrap a slice of bacon around chicken liver, place in oven and bake at 350 till bacon is done). Side dish of Horseradish or hot sauce. (I have taken this to so many parties only to be sneered at UNTIL they try it. Now it is requested.
Triscuit crackers (or your favorite), cream cheese, smoked salmon and prepared horseradish. (Place cream cheese on your favorite cracker, a piece of smoked salmon, then top with a dab of horseradish to your liken).
Take flour tortillas spread with cream cheese with chives on each one. place thinly sliced ham on top and then roll. Cut into desired width.
Sam's Club has a nice variety of ready made quiche dishes and many varieties of bite size desserts.
