I worked for a prison once, and you could ask for just vegetables, potatoes and bread in the cafeteria. I'm not sure what would happen if you were in solitary confinement. There was a kosher diet available for Muslim and Jewish inmates. The food wasn't very good and I doubt if you had vegan options. It was cooked by prisoners so there's no telling what you were getting.

A friend of mine has a vegetarian son who has schizophrenia. He was refusing to take his medication for a while and kept getting into trouble. I heard he had a hard time getting vegetarian food in jail and they said they were not obligated to provide it since it was not for religious reasons.

Unless, your sentence is only for a week, I would suggest you don't even mention it unless you want to get stabbed or have the cook spit in your food (which they often do anyway whether you offend them or not).
You will be served some kind of veggie but I doubt it it is pure vegetarian meaning not cooked with any kind of meat product either as ingredient or as flavoring.

I'm guessing if you are vegetarian due to animal rights, no. If its for religion, yes. So if you're planning on going to prison, pretend you're Buddhist.
