A lot of commercial bead is baked in tins lined with animal fats. Vegetable fats would need to be re-lined for each bake but animal fats can be used for a few loaves - thats why bakers prefer animal fats

Most bread has milk or milk powder in it.

We make out own veggie and vegan bread, its very easy and so much nicer than commercial bread.

Bread does contain eggs, but some Vegans believe wheat is for animals to eat, so they don't eat it.

Some vegans believe that yeast is living so they don't eat it. It's a fungus though so I think it's perfectly fine to eat. I feel as bad about eating yeast than I do mushrooms. I haven't actually heard of many vegans that don't eat bread... it's fine if that's what they believe but personally, I think eating yeast is ok.

Probably L-cysteine. It is an amino acid extracted from human hair and chicken feathers. I am not kidding you. It is added to some breads (usually flatbreads) for flavor.

I don't understand why they wouldn't unless it contained something that was made with other animal products like butter.

Mostly it's just because some of them are fanatics taking things to a ridiculous extreme. kinda like the 1/2 gallon sized fountain drink.
