Italian seasoning has many of the same ingredients as poultry seasoning. I believe the only difference is added oregano to the Italian. I use it all the time with turkey.....it works great!!

What do you mean "Italian seasoning"?
When we roast we usually use fresh rosemary, bay leafs, sage, salt, pepper and olive oil.

Yes, but dont' go overboard. Salt, pepper, and maybe a bit of garlic powder are best, IMHO.
