What a great gift! I am a vegan as well and these are some of my favorites:

-"Vegan Lunch Box" by Jennifer McCann. This book is very geared toward food that kids will like and should give her some great ideas on interesting foods to bring to school for lunch.

-"The Vegan Family Cookbook" by Chef Brian P. McCarthy. Also very geared toward families making food that is kid-friendly. It has pretty simple recipes, as does the previous book.

-"Vegan with a Vengeance" by Isa Chandra Moskowitz. Not so much geared toward kids, but this is a book filled with great recipes! Everything I've made from this book has been wonderful. It also has great informational sections on cooking in general and veganism. Very readable.

-"La Dolce Vegan!" by Sarah Kramer. This book also has incredible recipes and has always been a reliable cookbook for me. There's a great recipe for vegan macaroni and cheese that your niece would probably love!

I believe all of these books would be relatively straightforward and manageable for an 11-year old. The ingredients are fairly basic and the recipes are not too complicated for the most part. Good luck picking one out and I hope she loves it!

"Raising Vegetarian Children" by Joanne Stepaniak and Vesanto Melina is mostly about nutritional considerations for vegan kids, but it does have recipes as well for kid-friendly but nutrition-packed food.

Someone mentioned "Vegan with a Vengeance," which is a GREAT cookbook. No, it's not geared towards kids, per se, but there are a lot of really tasty recipes including delectable baked goods.

I've heard good things about "Vegan Lunchbox."

I like:
The American Vegetarian Cookbook by Marlyn Diamond

Macrobiotic Family Favorites by Michio Kushi is also a good one.

I don't know of any that are specifically for kids, but those two have lots of tried tested and true family recipes.

Re "La Dolce Vegan": Sarah Kramer also co-authored two other cookbooks with Tanya Barnard--"How it All Vegan!" (which has a section with recipes geared toward kids) and "Garden of Vegan."

"Conveniently Vegan" by Debra Wasserman isn't geared toward kids, but it does have some very simple recipes your niece can help her mom make.

And thanks for being supportive of your niece and her family.
