I am surprised nobody mentioned curried eggs. Makes a good dinner dish. Scrambled eggs with curry powder. Add a tablespoon of water for each egg and don't overcook. They should be very moist. I like them on rice.
And curried deviled eggs. Curry is a natural for eggs.
Do you like duck? I cut up the duck and use the curry powder as a rub and roast it.
I also use curry paste from the Asian specialty store.

Shrimp Curry,
Sautee onions in olive oil. Then add 1Tbsp. Curry & 1 Tbsp. Tumeric for 1 Min. Add 1 Can Coconut Milk. Cook for another couple of minutes. At this point I add Red Pepper Sauce to make it spicey. Then add shrimp and cook until Done. Serve over rice. Quick and tastes great.
