Sushi Roll

Ingredients-
2/3 cup uncooked short-grain white rice
3 tablespoons rice vinegar
3 tablespoons white sugar
1 1/2 teaspoons salt
4 sheets nori seaweed sheets
1/2 cucumber, peeled, cut into small strips
2 tablespoons pickled ginger
1 avocado
1/2 pound imitation crabmeat, flaked


Preparation-
In a medium saucepan, bring 1 1/3 cups water to a boil. Add rice, and stir. Reduce heat, cover, and simmer for 20 minutes. In a small bowl, mix the rice vinegar, sugar ,and salt. Blend the mixture into the rice.
Preheat oven to 300 degrees F (150 degrees C). On a medium baking sheet, heat nori in the preheated oven 1 to 2 minutes, until warm.
Center one sheet nori on a bamboo sushi mat. Wet your hands. Using your hands, spread a thin layer of rice on the sheet of nori, and press into a thin layer. Arrange 1/4 of the cucumber, ginger, avocado, and imitation crabmeat in a line down the center of the rice. Lift the end of the mat, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients.
Cut each roll into 4 to 6 slices using a wet, sharp knife.


Tip

If you do not have a bamboo sushi mat, the easiest way to roll the sushi is to use a clean dish towel.

Egg and Pesto sushi:

INGREDIENTS
2 cups uncooked glutinous white rice
4 cups water
6 eggs, beaten
6 sheets nori (dry seaweed)
1/4 cup basil pesto
salt and pepper to taste


DIRECTIONS
Combine rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and cook for 20 minutes, or until tender and water is absorbed. Leave covered, and let stand for 10 minutes. Remove to a bowl to cool completely.
Heat a skillet over medium heat, and coat with cooking spray. Pour in the eggs, and scramble until cooked through. Season them with a little salt and pepper. Remove from heat and set aside.
Lay one sheet of nori on a clean work surface, or if you have one, a sushi mat. Wet your hands, and press a layer of cooled rice about 1/3 inch thick onto half of the sheet. Spread a line of pesto across the edge of the rice about 1/2 inch wide. Top with a line of egg. Roll the sheet of nori over the pesto egg and rice to reach the empty part of the sheet. Wet the end, and roll up to seal. Use a knife to cut the roll into 6 small rolls.

For my nephew's birthday party, I made a 'dessert sushi' platter.

I made Rice Krispie treats and cut them into sushi sized pieces. Then I topped each one with red licorice and other candy to simulate the fish that normally goes on sushi. You keep it on the rice by using a bit of frosting as glue.

And for the dessert maki rolls I cut up Twinkies into fours and wrapped each section in piece of a green fruit roll-up using the frosting glue to keep it together. I put everything on a mirrored platter, with little bowls of chocolate sauce for 'dipping the sushi'.

The kids loved it and all the Moms wanted to know how I did it.

Best "creative" sushi roll i have had was as follows

Inside the roll : Fake Crab stick thingy, cucumber, mayo, yellow daikon pickle thingy, Tamago egg omlet

On the top, layered: Raw salmon, Avocado slice, and mango slice with chives. Its kind of layered and rolled on top of the roll - its AWESOME

i am assuming you or your chef friend aleady know how to make sushi... so the ingredients are what you are looking for... i make one that i call a 'spicy thai roll'

it has crab (you could use the imitation or real)
chopped peanuts
cilantro
cucumber
siracha sauce (it is the red sauce in the asian section of the grocery store that has a green top and a picture of a rooster)

it is really good, and spicy!

Steak sushi

Put sushi rice on plate, set med rare t-bone on top of rice. Cover with wasabi and soy sauce mixed together. More rice on top.

Scrape off rice covering as it is eaten, use seaweed paper as napkin.

Take the bone and using it like a trowel, make a interesting Japanese themed rice sculpture.

Compliment yourself by having your rice sculpture bronzed
