There are tons of vegetarian and vegan cookbooks.
Check out: "How it All Vegan!" and "Garden of Vegan" by Sarah Kramer and Tanya Barnard and "La Dolce Vegan" by Sarah Kramer
"The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson
"Conveniently Vegan" by Debra Wasserman (uses common packaged items for recipes)
"Vegan With A Vengeance" by Isa Chandra Moskowitz

One of the old all time favorites - Moosewood. The recipes are easy to follow for any level of cooking experience and I have never tried one that I didn't like through out my 35+ years of cooking.

the vegan meat and potatoes one is good also you can get a very small [[i mean very small]] one sent to your house along with some other free vegetarianism stuff from donoteatus.org and peta2.com
