Give me deep fried (dredged in a cornmeal mix; not battered) for catfish, bass, perch, and flounder; also want hush-puppies and french fries with these fish.
Now for salmon and tuna I prefer to pan sear and toss in oven and for sides with these I want veggie rice and a nice salad.
For other types of fish, it will depend on my mood, and if I am having guests. With guests I tend to be 'fancier' then I would be for just myself and hubby.

Pan fried, I dredge it in an Indian spice mixture and then a little rice flour.
I like grilled fish but have never been very successful at that, it always sticks and falls apart on the bbq making a mess. I always use a clean bbq and it's hot, so I am not sure where I am making the mistake!

My favorite fish recipe is what the jamaicans call "escovitch". Dredge kingfish or snapper steaks in flour and seasoning and fry till golden brown. Then simmer sliced onion, bell pepper, garlic, chives, chayote in 350 ml of malt or white vinegar with some allspice berries and bay leaf until the onions are tender. Pour this mixture over the fish and then allow to cool to room temperature.
I also love whole snapper, fried and then simmered in a pan sauce of butter, scotch bonnet pepper, onion, tomato, thyme and allspice berries. Wash the fish in lime juice, score the sides and rub in and out with salt and pepper.

Take parchemnt paper, lay fish on it, add slice lemon, add a little lemon juice, some salt and pepper, wrap up parchment paper, put in oven on broil. Go for about 10 minutes, or until fish is white , unwrap paper and enjoy. You can also add some asparagus or other vegetables and they will be steamed in the process

Scale it, take out its insides and then put spices inside it like pepper, oregano and Tabouli and then put heaps of lime juice over it, wrap it in aluminum foil and put it into the oven. Serve with some lightly boiled baby potatoes and vegies!

I'm not big on stronger tasting fish. but my husband didnt like any kind. funny thing he and I now both eat fish baked with chicken gravy and tarragon and butter. MM MM good.
