I have 2 chicken breast and have run out of idea's ...anyone out there with idea's as to what I could make for dinner with them.

Thank you all so very much...everyone of the recipes are wonderful..my mouth is watering already , now I just have to make up my mind which one I will make...will let you know at a later date :)

Curried Chicken Tea Sandwiches

INGREDIENTS

* 2 cups cubed, cooked chicken
* 1 medium unpeeled red apple, chopped
* 3/4 cup dried cranberries
* 1/2 cup thinly sliced celery
* 1/4 cup chopped pecans
* 2 tablespoons thinly sliced green onions
* 3/4 cup mayonnaise or salad dressing
* 2 teaspoons lime juice
* 1/2 teaspoon curry powder
* 12 slices bread
* Lettuce Leaves

DIRECTIONS

1. In a bowl, combine the first six ingredients. Combine mayonnaise, lime juice and curry powder; add to chicken mixture and stir to coat. Cover and refrigerate until ready to serve. Cut each slice of bread with a 3-in. heart-shaped cookie cutter. Top with lettuce and chicken salad.

This was very good. I really liked the different textures involved in the salad. I served this on cinnamon raisin bread which made it extra tasty!

Stuffed Chicken Breast

Serves 1



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
For the stuffed chicken breast:
1 chicken breast, bashed out flat
1 slice ham
5 mushrooms, cleaned
1 garlic clove, peeled
50g/2oz cheddar, grated
handful fresh mixed herbs
To deglaze the chicken:
1 glass white wine
1 tsp turmeric
25g/1oz fresh flat leaf parsley



Method
1. Preheat a griddle pan.
2. Prepare the stuffing for the chicken. Place the ham, mushrooms, garlic and herbs in a food processor. Blitz.
3. Spread the stuffing onto the flattened breast. Top with cheese.
4. Roll the chicken up and secure with cocktail sticks.
5. Place in the griddle pan. Cook for 10 minutes.
6. Remove the chicken from the griddle and finish in the oven.
7. While the chicken is in the oven, deglaze the griddle pan by pouring in the white wine. Scrape with a wooden spoon to collect the cooking juices.
8. Add the herbs and turmeric to the pan and stir.
9. Remove the chicken from the oven after 3-5 minutes. Take out the cocktail sticks.
10. Place the chicken on a plate and pour over the white wine glaze.

My favourtie chicken breast receipe is this:

Cut each chicken breast down the side, open up, and scoop in 2 teaspoons of Philadelphia cream cheese. Put the chicken breast back together, and then wrap with three slices of bacon or parma ham. Cook in the oven for around 30 minutes on 190 degrees. Serve with boiled new potatoes and green beans, or salad. Yum!

Cut a slit in each breast and stuff it with some dried apricots that you have warmed for ten minutes or so in brandy, wrap each breast in a couple of rashers of smoked bacon to hold the apricots in place, serve on steamed spinach with lots of black pepper

Alternative stuffing that works well is cheese and a crushed clove of garlic....er...good if both of you are eating the same thing...not so user friendly if you're doing one of each!

Another really simple one is to make an envelope/parcel out of tin foil and pop in the chicken and whatever herbs you fancy [oregano and a slice of lemon is a good blend or simply just a bay leaf]. Pour in a slosh of white wine, pop it int a preheated oven for about 20mins or until cooked through and Hey Presto....yummy and succulent.

I`ve just made for my lunch,chicken with pesto and mozzerella.
Slice the breast in the middle,add a little seasoning a teaspoon of pesto and stuff with as much mozzerella as you wish.
It takes around 25-30 mins in the oven at 200 degrees.
I usually cook along side it,chopped leeks and carrots with a little drizzle of olive oil on the top.
Together with the juices of the chicken flowing into the vegetables it`s delicious,and quick and easy.

Make chicken chassuer
Get a chassuer mix from the shop (tesco,asda or jacksons/sainsburys) get peppers cut them into strips then do the same with an onion, make up the mix then put them, with the chicken breasts(uncooked)altogether in a casserole dish on gas mark 4 for 2 hours serve with jacket potato.

Cut them into thinner pieces and then gently fry in lemon juice, black pepper and olive oil. When they are cooked add a some chicken stock and make a sort of gravy. Serve with mixed rices, toasted pine nuts, parmesan cheese and parsley.

Split the chicken break open and fill with cheddar cheese or brie, or stilton or any cheese you have then wrap a strip of bacon around the outside to hold the cheese in and chuck in the over, Beautiful and very quick!! x

Bake them in the oven at 350, with no seasonings for about 45 minutes or until done. Then cut them in strips, serve on flour tortillas with tomato, lettuce and shredded cheese, add salsa or guacamole or just plain taco sauce.

cut a little pocket in them.

spread inside with cream cheese

then wrap in parma ham. or you can stuff the parma ham in with the cheese and seal it with a cocktail stick

pan fry the seal shut and then after 3 mins fill the pan with a small amount of water and put a lid on it.

cook untill the chicken is cooked right through and then enjoy

its really nice
