Either way works, depending on what you are serving it with.
A Mexican cheese dip works very well when it is warmed in a fondue pot or similar warmer, especially when you are dipping corn chips (yum).
A salsa can be served warm, cold or room temperature, and each projects a different effect. I like salsa on almost everything--eggs, breakfast tacos, hamburgers. Not ready for salsa on my doughnuts yet, but that's next.

I always make mexican dip--and I make it quite a bit here and there
I prefer having it cold, especially if you have salsa or sour cream in it--then it gets kinda yucko

room temp sounds good to me. but it might be interesting heated, and a bit messier, with the sour cream going runny and the beans thinning out with the heat, but it's ALL GOOD!

I like eating it warm. It mainly depends on your taste.
