Tell them you are sorry about what is happening to them. Do some reminiscing of pleasant experiences you had together. Ask them how they are coping and do they have family/friends around. If you are in a position to visit and would like to visit, ask them if you can visit. If they rather not, then keep up your writing to them.

In ONE paragraph say...."I was really sorry to hear about your illness. If there's anything I can do or if you just want to talk, I'm here for you".
Try to make the rest of the letter/email cheerful and friendly and just talk about old times and catch them up on what's going on in your life.

Just say Hi and that you wanted to get back in touch with them. You can mention that you heard they had cancer, but definitely don't make that the focus of the letter... make the focus of the letter be that you wanted to get back in touch with them.
