I love to cook but am tired of the same old.

If you have more than one please share as many as you do have.

Note: my hubby will not eat seafood unless it's shrimp. he also does not like rice. so picky lol.

how about healthy chicken fajitas (or beef)

I dont really measure, but I will do the best I can here for you.
About 1/4- 1/3 cup lime juice
an amount little less than the lime juice - soy sauce
about the same amout of soy sauce - water
some minced garlic. (we love it so we use about 4-5 cloves)
a dash of liquid smoke,
about 2 tablespoons olive oil
cayenne pepper
black pepper

I butterfly my chicken breast and marinade for a minimum of 30 minutes. I prefer to cook mine on my George Foreman.

Slice them up when cooked and make your fajitas anyway you wish. I like wheat or one of the other "flavors" of tortillias, lettuce, light cheese, onions peppers salsa...Yummy.

One of the best parts of this, is you can marinade a lot more chicken and instead of cooking it, freeze it so you can be ready for meals down the road. Of course you can only do this if the chicken has not been frozen previously. If it has, cook it then freeze it so you can simply reheat it for fast quick meals.

Not a dinner but a fancy side:

Marbled eggs:

Use as many eggs you wish to serve
Water
3 Tbsp. Soy sauce
1 Tea bag (black) per 2 eggs strings and tags removed

Place eggs in sauce pan and cover with water. Add soy sauce. Heat to boil. Simmer 10 minutes. Remove from heat and cool with cold water. When eggs are cool enough to handle, crack them in several places but DO NOT REMOVE THE SHELL FROM THE EGG.
Place the eggs back into the sauce pan and cover again with water. Add tea bags. Bring to boil. Lower heat and let simmer for an hour. Remove from heat and let sit for one more hour.
Remove eggs from the water and now peel the shells from the eggs.
There would now be brown lines on the eggs where the cracks in the shell used to be, giving them a marbled look.

Can be served whole or deviled (any deviled recipe)

how about a meat loaf you can make it as big or as small as you want . if you dont want a big meatloaf and your recipe makes a meat loaf for 5 then cut it in half.
here is a recipe for hearty ham steak
2 tablespoons prepared mustard
2 tablespoons pineapple juice or other fruit juice
1 tablespoon brown sugar
1 tsp horseradish
dash of salt
1 fully cooked ham steak about 3/4 inch thick
combine all ingredients except ham slice in a small saucepan. heat to boiling stirring occasionally
place ham on grill 4 inches from medium coals . cook until hot and glazed about 4 min on each side bastng with mustard mixture frequently

grilled sweet potatoes
pare 2 sweet potatoes, cut diagonally into 1/2 inch slices, cook slices in 1 inch boiling water for 10 min. drain. mix 2 tablespoons butter or margarine, melted and 1/4 tsp salt
place potatoes slices on grill 4 inches from medium coals. cook 10 min on each side brushing frequently with butter mixture. sprinkle with toasted cocnut on potatoe slices. serves 2
