Something from life drawing class if you want to make a statement that way.
His dog if he has one, or some other pet of his.
Landscape/cityscape, preferably one in your area.
If you want to be really aggressive with this, ask him to sit for you. Maybe you can do a life drawing!

Draw something YOU like; it can be anything. Then just explain what it means to you. Be artistic and creative !

If your skill level is up to it, draw him! He'll probably like it, even it is crappy. And if it crappy, then you will have something to laugh about together.
