I'm big on simple and elegant. Here are some ideas:
1. Pork Roast: mix 1 T kosher salt, 2 T rubbed sage, 1 tsp fresh ground pepper and rub generously over roast. Place in 350 degree oven and pour 1 cup white wine or broth in pan. Cook for 30 minutes and baste with liquid. Add more wine to pan as it dries out. Bake for approximately 1 1/4 to 1 1/2 hours depending on size. Remove from baking dish and let sit for 20 minutes. Deglaze dried bits from bottom of pan by using 1 cup white wine. Add 1 T dijon mustard and salt and pepper as needed. Simmer to thicken and add a bit of cornstarch if you need to. Spoon over slices of pork.
2. Fresh green beans with lemon butter and almonds: steam fresh green beans until they are crisp tender and toss with 3 T melted butter mixed with 1 tsp lemon zest. Salt and pepper to taste. Add slivered almonds before serving.
3. Mashed yukon potatos with sour cream and garlic: cook potatos in chicken broth and drain when fork tender. Add sour cream and a little garlic powder, along with 3 T butter. Add salt and pepper to taste.
4. Pinot Grigio chilled or a nice Sangeovese

Absolutely one of my favorites.... very elegant and so very easy. Always get tons of compliments.
Chicken Elegante.
Take a 9 x 13 inch bake pan.
One Jar of Dried Beef... found in the canned tuna, meat aisle
Make eight small circles in the bottom of the pan using 3 thin slices of the dried beef.. (place in circle overlapping the edges.
Place one small boneless chicken breast (sometimes you need to cut a large one in half) and form a small ball folding the edges under. Place on dried beef circle.
Par fry 8 pieces of bacon (not crisp) or you can use the all ready prepared bacon, break in half and criss-cross across the top of the chicken breast.
Mix 1 can cream of mushroom soup with 1 cup (8oz) sour cream. Spoon over the chicken.
Place one piece of swiss cheese on top of each chicken breast.
Cover with foil and bake for 1hr 15 min at 325 degrees, remove foil and continue to back another 15-20 minutes.
Let it set for about 15 minutes once you remove it from the oven. To serve carefully remove a little chicken bundle, don't forget the dried beef on the bottom, place on plate and spoon a little sauce over it, or you can serve the extra sauce on the side...

SUPER EASY CHOCOLATE CHERRY SUPREME
1 can crushed pineapple
1 can cherry pie filling
1 box chocolate cake mix
1 cup chopped nuts -walnuts or pecans
2 sticks of butter
Place crushed pineapple and cherry pie filling in the bottom of a 9X13 baking dish. Sprinkle cake mix over the top of fruits. Sprinkle nuts over top of cake mix. Slice thin slices of butter over entire top of pan. Bake at 350 degrees for 1 hour.

well my favorite simple meal would be what i call chickghetti
well first fry some boneless chicken breast with whatever spices you use then boil some water make the spaghetti noodles then put the nooles on a plate put the chicken on top then top it with some marinara sauce and parsley.

boneless chicken breast
one 15oz cream of chicken soup
one 15oz cream of mushroom soup
one 15oz crea of celery soup
1/2 can 15oz chicken broth
one med.onion cut as small as you like it
and a little garlic to taste
mix your soups and broth pour over chicken and onions cover with foil and bake at 375 for one hour
you can use the "gravy" over mash potatoes, rice, or pasta
