I've only worked for them for 7 months but I'm extremly stressed out and do not enjoy the job anymore. I think I want to go back to school, so what should I tell them

Actually its good to write down emotions in a pleasant way ( even though you didn't enjoy the work there) and tell them you are going back to school again because of family commitments and do the things in a smooth way

Tell them that you appreciate the opportunity to work for them, but you have decided to go back to school and won't be able to work there anymore. Be as pleasant as possible, because in the future they can be references for you.

I wouldn't write a letter to an employer, because they might decide to use it against you. Instead I'd tell them that you plan to go back to school, nothing else.
