Some parrots have the ability to mimic a variety of sounds, including speech. Even if they don't understand the words, they will mimic sounds made by their companions, including humans. Many parrots are also smart enough to understand some human speech. This isn't so amazing actually; dogs understand some also.
You may have heard of the gorilla Koko who was taught to speak in sign language, and can communicate at a pretty high level, better than any parrot. She can't vocalize the words because gorilla mouth and throat parts are not made for it.

Because they have the proper vocal chords to produce what we call "speech"; although most of the time they probably don't know what they're saying, they're just repeating a sound they heard.
Some gorillas on the other hand can't talk with their voice, but they have learned a basic vocabulary in sign language and can have intelligent conversations with Humans.
