for presentation purposes and also the skin will shrivel up and make the squid curl up and it will peel when cooked, so it looks nice and besides the skin can become a little tough to chew. the soggyness is from not frying in hot enough oil. try frying in peanut oil, it has a higher smoking point so you can get a crisper coating and when you are letting it cool try laying them on a wire rack that way the steam can escape without seeping through the coating. good luck and happy cooking!

The skin of the squid is edible. It is not chewy or tough like what most of them believe.
Most people remove it when cooking is because of the color. When u cook squids with the skin on, it will turn your gravy or soup into purplish color. It has nothing to do with the sogginess that u experience when u deep-fry them.
U experience sogginess when u deep-fry your squid most probably your oil is not hot enough, and your batter is too wet and thick.
I cooked my squids with the skin on all the time as I feel that the flavour is richer.

You remove the skin membrane because it is cleaner. Maybe try patting the squid down to get rid of excess liquid and then toss it in the coating to cook.

its just unedible, yes, it is digestible like squid ink, but it doesn't seem right for consumption, you won't die from leaving it on, but you probably will have a hard time chewing it down which is why they tell you to take it off.
and for future answers along with the ones already there, stop commenting on other people's foods and recipes, i myself love squid, in parts of Asia they eat dog, but i don't comment, its just their style.
