I would never "hit on" someone, because I find it to be degrading and insulting. If I fell in love with a Muslimah, I might spend more time with them. However, since I know that it is against their religion to be with a non-Muslim, I would never try to have a long-lasting romantic relationship with them. I would just enjoy their friendship, since companionship is the most appealing part of love (for me, at least).
Some men are lustful and lack self control. They might disrespect a Muslim woman by acting in such a way. It's a very selfish thing to do, since their religion prohibits such things...

hey! im in the same situation.. could never figure out why. Been in college for 2 semesters before i got asked out, hit on, and given flowers by different boys.. I didnt understand it considering we're from two different worlds and i wear hijab.

The challenge. Like some guys wanting to "deflower" a virgin. Or, maybe he thinks he can convert her. Or, maybe he really hates Muslims and wants to use her and kick her to the curb. It is hard to say without knowing more about the person, but these may be some of the possibilities.
