I like them loaded if I am having a light meal, but if I am having roast beef with gravy,,,,I want them plain with just butter, salt and pepper..
I like cream cheese,,,regular cheese,,,bacon, chives, green onions, garlic,,,sour cream, parmasean cheese,,yoghurt if I am on a diet,,,here is my favoirte way:
Loaded Mashed Potatoes
5 pounds potatoes, peeled and cubed
3⁄4 cup sour cream
1⁄2 cup milk
3 tablespoons butter or margarine
Salt and pepper to taste
3 cups (12 ounces) shredded cheddar cheese blend, divided
1⁄2 pound bacon, cooked and crumbled
3 green onions, sliced
Place potatoes in a Dutch oven and cover with water; bring to boil. Reduce heat; cover and simmer until tender. Drain and place in a mixing bowl. Add sour cream, milk, butter, salt and pepper. Beat on medium – low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions.
Transfer to a greased 3-quart baking dish. Top with remaining cheese. Bake, uncovered, at 350 degrees for 30 minutes or until heated through and cheese is melted.

I usually put butter, milk, salt and pepper in my mashed potatoes. I offer side dishes of green onions, chives, sour cream, crumbled bacon, etc so people can customize their own mashed potatoes however they want to! ;-)

I like using russett (Idaho) taters and boil them in butter and salt. I let all the water vaporize out and let the bottom of the kettle turn a tad bit brown then I put them in my creaming bowl and add a few TBSP of my favorite mayo, heavy whipping cream, salt, butter and pepper and whip. But when I use my mixer I fold air into them so they get incredibly fluffy:)
