Some body language can be read on it's own. Crossing your arms can suggest your defensive or closed off. Standing with your feet turned out suggests confidence.
More often than not though to truly understand body language you need to read it in the context of a conversation. There is no way to know for sure what was going on.

It depends, body language is not completely universal and many times is situational. The person talking to the guy or someone who knows the guy well would probably be able to give a better answer, If you were the person talking to to him and/or know him well and still don't know the answer then it would be that much harder for someone else to figure it out.. You could try asking the guy himself though that may or may not be helpful. Also try thinking about what he was saying, how he was saying it, and what other bodily communications he was displaying at the time.

It just might be his way of being comfortable. Is he looking into your eyes and smiling? If so, then don't worry about the head tilt, he is interested in hearing what you have to say.

It means that this guy is expressing confidence in front of this girl. Reason being, he either knows that this particular girl likes him, or he is being totally passive. Meaning he knows she likes him and doesn't care or thinks he is top stuff.

I think that he is simply trying to avoid eye contact, since this tends to make guys feel uncomfortable. Most guys believe that eye contact implies intimacy, and since he doesn't know you that well, he might think that it is inappropriate to stare into your eyes.
