Don't be scared. You don;t have to freeze it first. we do ours with olive oil, just a tad or do on a griddle is good. Just about 2 to3 minutes on each side and the red does show through but if you cook it any more it will be like shoe leather. There will be line that will turn sort of white, turn it over and cook until there is a line on the other side and still red in the middle and it's done.

if you buy good quality tuna, no you wouldn't get sick if it's too rare (people do eat sushi and tuna tartares). as far as cooking, for a tuna steak that's about 2 fingers thick, you'll probably need maybe 1.5-2 minutes on each side if that. just make sure that your pan is very hot before you put the tuna in to sear it. the way you'll know that it's done is that it gets a nice crust on the bottom and on the side, you have almost no red (maybe a thin strip of pink). take it off the pan, let it rest for about a minute, slice on a diagonal and serve. good luck!

The first thing is that you have to start with good fish. I would say to only buy the fish from a seafood company, or someplace that specializes in seafood. I would definitely go with sushi grade tuna. Also, check to make sure that the fish doesn't smell fishy (that means it's bad). Do not freeze it! Buy the fish the day you plan on preparing it. Heat up a pan (nonstick) or you can also grill them. Make sure the pan is hot and add in a little oil (I prefer olive oil, but you can use any oil). Season the tuna with salt and pepper, and add to the hot oil. The tuna should only take 2 minutes each side (more if they are really thick). The thing is to get each side cooked slightly, and the middle to still be raw. I've done this at my house and it is perfectly safe to eat and prepare. Maybe 3 to 4 minutes per side. Depending on how think the cut is. No you probably won't get poisoned if it's too rare. Remember that people eat raw tuna in sushi all the time.

just make sure it is a good grade of tuna like ahi tuna and make sure it does not have a strong oder to it and no slime or it is to old!!!!
