I mix my fillings on Monday, cover and refrigerate well then I bake the pies on Wednesday night. By making the fillings a day or so early, the flavors get to really blend and the pies taste oh so good! :)

I wouldn't make them more than a day ahead...crust tends to sog out. You can't freeze the pumpkin custard, but you could assemble the apple pie, wrap it well and freeze it unbaked for a few weeks, then just pop it still frozen into the oven about 45 minutes to an hour before you want to serve it.

I make my pies the day before Thanksgiving and then keep them in a cool room. This year I'm making pecan pies, a chocolate chip chess pie, and two pumpkin pies. I also make the deviled eggs the day before. I boil a chicken for the broth and bake my skillets of cornbread two days before Thanksgiving. I dice my onions and celery and put it in a baggie. I crumble the cornbread and a few slices of white bread to dry. Then the day before Thanksgiving, I make my dressing and refrigerate it overnight before baking it. I also make my coconut cake a day before Thanksgiving. I don't like to have so much to do at the last minute that I don't get to enjoy my family.

At my house about 20 minutes before Thanksgiving dinner is about as advance as you can make it.

Depends. If you freeze them - up to a week ahead. If you have willpower and can keep from cutting into them early - 2-3 days ahead if they are wrapped well and stored in the frig.... We make ours the night before...

You can make it weeks in advance - just wrap it in aluminum foil sealing it tightly and freeze it - remove from freezer several hours before to defrost and reheat in oven....

I make a my desserts the night before and refrigerate them until the mid morning before I have my guests over.
