Cooking is only hard if you make it hard and don't pay attention. You can do this!
Lemon pepper chicken with steamed vegetables and baked potato.
For the chicken, get either chicken breasts or strips. Use either lemon pepper seasoning or get a bottle of lemon pepper marinade. I prefer the marinade for new cooks. Pour some marinade in a baking dish, put the chicken in the dish and pour the rest of the marinade on top. Bake at 400 degrees until cooked. Check it every 15 minutes if you need to. Baking time depends on if you use breasts or strips.
Pick up a package of frozen vegetables, whatever kind you like and place the veggies in a pot of water and cook on the stove top. Put the lid on the pot and cook on medium-high heat. Check every 5-10 minutes to be sure you still have water in the pot and the veggies aren't mushy. Usually takes 10 - 15 minutes once the veggies get boiling.
Baked potatoes. You can get potatoes wrapped in plastic wrap at Kroger. Pop them in the microwave and nuke 'em. If your microwave doesn't have a baked potato button, start with 3 minutes and add 3 minutes until done.
This is a really good dinner, is quick and simple. You can do it!

mini english muffin pizzas - kids can make their own toppings, you put on pizza sauce on the english muffin half, they do the rest, bake for 10 min on 350 Another is mac/cheese with ground beef or chicken. 1 lb pkg of elbow macaroni or other small fast cooking pasta, 1 jar Ragu Cheedar Sauce, 1 can cooked chicken breast, drained, a little salt, 2 cups pea/carrot mix or other veggie that they like. Cook the noodles, drain, add the rest and heat up. Should be enough for left overs too. Filling, fast, and very kid friendly. Another idea for you to cut down on time is to prepare all the weeks meals over the weekend. Freeze/refridge and heat up. I love my crockpot because I can make a large batch of chili, we will eat it one night, freeze the other half and pop it in and heat again in crockpot before leaving for work so it is done when I get home. I cook it all on low for the entire 8-9 hours. Gumbo, chicken, meatloaf, roasts, soups/stews, the crockpot bags are great in a real pinch, etc. are all done in th crockpot and then I just heat up frozen veggies or make a salad to go with. If you need a starch, instant potatos or rice/noodle pouches are wonderfully quick. I use two crockpots and rotate out so they are clean and cool on oposite days.

Want to look like a pro, without all the headache and damage clean-up that normally goes with cooking, huh?
Okay. Here are two suggestions I'd make:
1.) Stir fry. It's easy, takes about 20 minutes to get everything done, and you can find all the ingredients at the local grocery store.
First, pick up a package of frozen mixed vegetables (not the diced stuff - the basically whole veggies) from the freezer section; while you're there, find a bag of pre-cooked diced chicken (or beef) and throw that in the cart as well. Next, stop by the sauce isle and find a bottle of stir-fry sauce (yes, they actually market a version of teriyaki sauce as Stir-fry sauce).
Take all this stuff home, pour the veggies and meat into a large frying pan and start cooking over MEDIUM heat - or even the low end of medium - until they're all thawed out and starting to cook. Add the sauce....the more the merrier, but I highly recommend you don't leave the veggies bathing in the stuff. Cook until the meat is nice and hot, and serve.
2.) We're still sticking with chicken, here. It's not as hard to cook as you think...honest!
Get a couple of chicken breasts from the meat department, as well as a box of linguine noodles and some spaghetti sauce (I recommend using a marinara - you don't want to mix beef sauce with chicken, trust me on this...too confusing to the taste buds!).
To get things going, spray a large frying pan with non-stick Pam or something similar, place the chicken breasts in the pan and turn the heat to medium (or the high end of medium). Once the breasts heat up (you'll hear the frying sound, trust me) set your timer for about 7 minutes. Also, begin boiling the water for your noodles - a medium-sized pot will work nicely for noodles for two. Some people recommend adding salt to the water when boiling it, as it increases the water temperature needed to boil and helps prevent clumping of the noodles. I'm not one of them. Add a LITTLE bit of olive oil (if you've got it, otherwise use regular vegetable oil) as you're starting and you'll get the same results without the added salt in your diet.
When the timer goes off, add the linguine noodles to the boiling water and set the timer for an additional 10 minutes. Now comes the important part: turn over your chicken breasts, and put a cover on the pan. This will allow your chicken to cook evenly, and to still be juicy. Also, turn down the heat on the pan to the low part of medium.
When your timer goes off again, turn off the heat for both pot and pan, drain the noodles, then place them on plates, top with the chicken breast and pour the sauce over both noodles and chicken.
Parmesan cheese is great on top of all this as well....

Take two chicken breasts and marinate them in Italian dressing for 30 minutes. Then BAKE them in the oven at 350 degrees for about 30 minutes. Take them out and make sure they're no longer pink in the middle.
For cheap side dishes, why not do frozen vegetables! They're easy and now there's a company that has them in "Steam Fresh" bags so all you do is pop the bag into the microwave for 4-6 minutes (depending on what the instructions say) and enjoy.
That's nearly fool-proof. Good luck!

You may want to stick to ordering some take out.
Or try Salsa Chicken. Take chicken breasts and cover them with taco seasoning (the packets from the grocery store) put them in a baking dish and pre heat your oven to 400. Put one package of spanish rice (with all ingredients needed as directed by package) into the dish as well. I add stewed tomatoes to the mix and then cover the chicken with salsa. Bake for about 1/2 hour. Put a little Mexican or Cheddar cheese on the chicken and serve up with some salsa. Very simple and tastes really great.
Also get some Negra Modela (dark Mexican beer) to go with it. Or try to make some sangria just add fresh fruit to your favorite wine. Very good.

Baked chicken breast in your favorite spaghetti sauce with a side of rice and your favorite fresh vegetable.
350 for 1 hour with chicken breast smothered in sauce. You can also sprinkle shredded cheese when it's done.
Or you can preheat the sauce in the microwave and quick braise the chicken (make sure it's thawed) on the stove or bbq. When the center is a uniform white then the chicken is done.

well, actually, you can boil chicken... i did night before last to make chicken and dumplings!
but anyway... quick, cheap, and easy...
chicken salad.
get a can of chicken (it looks like tuna, only it's white meat chicken)
stir in cut up apples
cut up grapes
sliced celery
pecans
pickle cubes
and mayonaise (until creamy)
(all ingredients except chicken and mayo are optional. this tastes good plain with salt and pepper to taste, or with the extras.)
creamy chicken &cheese noodles
take a box of macaroni and boil it
during the last two minutes, stir in a can or two of your favorite veggies (i usually use peas and carrots, and corn)
also stir in a can or two of chicken (as described in the other receipe)
drain it when the chicken and veggies are hot and the pasta is done
return it to the pot, and add chopped up velveeta cheese. stir well until cheese has melted.

Taco Casserole
1 lb ground beef
1 can chili beans (undrained)
1 (8 oz) can tomato sauce
2 tbsp salsa
4 tbsp chili powder
1 tsp garlic powder
12 corn tortillas (torn)
Green onions, chopped
1 tomato, chopped
1 can olives, sliced
3 cups shredded cheese
1) Heat oven to 350.
2) Cook ground beef until browned, then drain.
3) Stir in beans, tomato sauce, salsa, chili powder and garlic powder. Heat to boiling, then turn off heat.
4) Spray casserole dish with cooking spray. Place some tortilla pieces on bottom of casserole dish. Layer with beef mixture, then top with cheese. Layer again until beef mixture is gone.
5) Top with cheese, green onions, tomato and olives.
6) Bake uncovered for 20-30 minutes.
*Serve with jalapenos, hot sauce and salsa

I'm not sure where you live but alot of grocery stores carry those precooked rotisserie chickens, they are sooo good my husband and I had one last night. Plus they re only about five dollars. Just heat it back up at home with some stuffing and some vegetables.
