Hi-I am trying to make a veggie salad (lettuce, onions, green peppers) in advance for the week. I enjoy eating a salad on my lunch, but I don't get enough time to prepare the salad and eat it. I would like to buy the vegetables and prepare enough for a week at a time. Has anybody ever done this? Maybe using a food saver or something? Any ideas will be grealy appreciated.

I DO IT ALL THE TIME, I MAKE THE SALAD, CUT LETTUCE, CUCUMBERS, TOMATO, RADISHES, PEPPERS, ETC.... WASH THEM, DRAIN THE WATER VERY GOOD... PUT IT IN A HUGE TUPPERWARE BOWL WITH THE LID, YOU DONT HAVE TO KEEP EVERYTHING SEPERATED,PUT IT IN THE FRIDGE, MINUS THE DRESSING, I TAKE OUT WHAT I NEED EVERY DAY AND PUT THE DRESSING ON AS I EAT IT... IT STAYS CRISP AND FRESH FOR ABOUT 5 DAYS!!! IT TAKES THE GUESS WORK OUT OF "WHATS FOR LUNCH" OR "WHATS FOR SNACK/DINNER" TRY IT.... I PROMISE YOU WONT BE DISSAPPOINTED... JUST REMEMBER NO DRESSING!

Yes, I've done it. It works well for a while if you keep out moist things like tomatoes. Your best bet is to keep the onion in a separate container for the week and then add it each day to what you're taking with you. Onion will stick to everything in the salad and it's all you will taste if you leave them together for the whole week.
Just make sure you don't put any dressing in until before you eat it. That will totally moisten things too much.

Lettuce won't stay crisp that long when mixed with other things. I would clean and chop the lettuce and store in an air tight container and also chop the onions and peppers and store them in seperate containers. Then all you have to do is assemble in the morning or before you eat it. By the end of the week, it may be gross.

I would also suggeest using romaine lettuce. It seems to stand up better than iceberg and other leafy lettuces. And I fully agree with everyone - just put the dressing on what you will be eating for that particular lunch.

My only suggestions is to cut up each veggie to the size you like and keep it in its own container. Then each day put together your salad. I would not do it for a whole week though.

I agree with previous posters, the lettuce should be kept separate. Also, don't chop the lettuce with a knife, use your fingers to tear it. It won't bruise the edges as bad and will last longer before it starts to wilt.
