Make Rosti potatoes.
Peel several large potatoes. Shred them using a grater and make flat pancakes that you fry up in a bit of olive oil with a teaspoon of butter added for browning. Serve the pork chops on top of the Rosti, the potaoes will absorb the juices.
A good Bavarian beer (or any beer) would complete the dish!!!

Chive and Garlic Mashed Potatoes
4 to 6 pounds Yukon gold potatoes, peeled
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/2 stick (1/4 cup) unsalted butter
4 cloves garlic, lightly crushed
3 sprigs fresh thyme
2 tablespoons chopped chives
Put the cut potatoes into a large pot, cover them with cold water, and add a large pinch of salt. Bring to a boil and simmer until the potatoes are fork tender, about 20 to 30 minutes. Drain well. Meanwhile, in a small pot heat the cream, butter, garlic, and thyme. While the potatoes are still warm, press them through a potato ricer or food mill into a bowl. Stir in the warm cream a bit at a time, straining out the solids, until the potatoes are fluffy. Season with salt and pepper and gently fold in the chives. Serve immediately.
Mashed Potatoes Recipe
4 pounds golden creamer potatoes, peeled and cut into quarters
1 bay leaf
Kosher salt and freshly ground black pepper
2 cups heavy cream
3 tablespoons unsalted butter
2 tablespoons chopped chives
Put the potatoes into a large pot, add the bay leaf, 2 tablespoons salt, and cover with cold water. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. Drain them well and remove the bay leaf. Meanwhile, heat the cream and butter in a small saucepan. Put the potatoes through a ricer or food mill into a bowl. Add the hot cream and season with salt and pepper. Mix together with a spoon and add the chives.

Parmesan Potatoes au Gratin
4 large russet potatoes peeled and thinly sliced
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 large clove garlic finely chopped
6 tablespoons freshly grated parmesan cheese
1-1/2 cups chicken stock
Directions
Preheat oven to 400.
Lightly grease oval gratin dish and arrange a layer of potatoes on bottom.
Sprinkle with salt, pepper, 1/3 garlic and 2 tablespoons cheese.
Repeat twice more and pour over stock.
Bake 45 minutes stirring potato mixture every 20 minutes or so or until potatoes are tender.
Place under broiler for 4 minutes or until top becomes golden brown

Slice thin, leaving the peeling on, spread on a baking sheet, add a stick of butter cut into pieces, sprinkle with seasoned salt, bake in 350 oven until potatoes are tender, sprinkle top with shredded chedder cheese and bacon bits, return to oven until cheese melts.

I like them pealed, boiled, drained, and then topped with butter and salt and pepper. Fried potatoes are good with pork chops too.
