5 lbs pasta dry (your choice on type elbows etc) prepare according to packages
cheese sauce
5 lbs extra sharp cheddar cubed
1/2 gal milk
1 cup flour
1 stick of butter
2 lbs shredded cheddar cheese(differrent color than other cheddar)
in a stock pot, melt butter, add milk to melted butter whisk in flour bring to a gentle boil reduce to simmer add chunks of the 5 lb cheddar stir until completly melted
Mix cooked pasta into the cheese sauce sprinkle with the shredded cheese bake at 350 till the shredded cheese melts about 20 min. enjoy

In lowcountry, South Carolina, they make "macaroni pie" which is baked macaroni and cheese but layered and not a smooth sauce. My kids grew up on it and love it, as do 99% of the people I've served it too, and it is a southern classic. Per 13 x 9 inch pan, you would need 2-3 depending on other items on menu.
Boil 1 lb of elbow macaroni per package directions.
Get out 16 oz or so of shredded cheese, and 1 stick of butter or margarine.
Spray pan with Pam or other spray.
Layer 1/3 of the macaroni, the cheese and the butter cut into tiny pieces in the pan. Sprinkle heavily with pepper and some salt and repeat until use all the ingredients. On the top layer, make sure you have cheese covering all of the pasta, else it gets crunchy while baking.
Put 2 eggs into a 16 oz glass and pour milk about 2/3 of the way up. Beat together well, then pour slowly over the top of the macaroni mixture.
Cover with foil Bake at 350 or whatever temperature your oven is at, until cheese is bubbly and melted (about 30 mins). Take off foil and brown cheese, let stand 5 mins before serving. If your oven is higher or lower, adjust cooking time.

I found this recipe online a few weeks ago and it turned out really really yummy. Its really easy to make too. I think I sprinkled extra cheddar cheese on top because I like it very cheesy. This recipe made one cake pan full, you'll have to adjust accordingly to your serving size. Good luck!!! :)
Pasta with Three Cheeses
1 pound elbow macaroni, wagon wheels or other medium pasta shape, uncooked
4 tablespoons margarine
4 tablespoons flour
1 teaspoons dry mustard
4 cups skim milk, room temperature
salt and freshly ground black pepper to taste
1 15 ounce container part skim ricotta cheese
8 ounces white or yellow low fat Cheddar cheese, grated and divided
1/2 cup grated Parmesan cheese, divided
chopped fresh parsley for garnish
Prepare pasta according to package directions; drain. Heat margarine in a large saucepan over medium heat until melted. Add flour and stir until flour is lightly golden, about 2 to 3 minutes. Add dry mustard. Gradually whisk in the milk until smooth. Cook until the sauce boils and is thickened, whisking constantly over low heat, about 10 minutes. Season with salt and freshly ground black pepper. In a mixing bowl, combine pasta with ricotta cheese, half of the Cheddar cheese, and half of the Parmesan cheese. Add the sauce. Spoon into a lightly oiled 9 x 13 inch baking dish. Sprinkle remaining Cheddar and Parmesan cheese on top. Bake at 350F until browned on top, about 30 minutes. Let cool for 10-15 minutes before serving. Garnish with chopped fresh parsley. Serves 6 to 8.

Take a regular mac and cheese recipe and multiply everything by 6--that should make enough for 40 people.

Just buy the frozen stoffers one. It's restaurant styled one and it's really good. They have a party sized one so buy however many you think you need. It takes an hour to bake.

try to make it fun use different types of pastas use different types of cheeses and throw a lot of ground meat it will be a feast for the eyes and for the tummy as well
