A pasta dish is a great idea, just add chicken to your favorite pasta dish, french bread and maybe a chilled bottle of white wine. Enjoy

Try this its scrummy!!!
The Bestest Carbonara Ever
Serves 4
What You Need
4oz Pancetta
20z Pecorino Cheese
2oz Parmesan Cheese
3 Large Eggs
12oz Spaghetti (Fresh)
2 Large Cloves of Garlic, peeled and left whole
2oz of Unsalted Butter
Sea Salt and grated Black Pepper
What You Do
Put a large saucepan of water on to boil, in the mean time finely chop the Pancetta, having first removed the rind.
Finely grate both Cheeses and mix them together.
Beat the Eggs in a medium bowl and season with a little of the black Pepper.
Add 1 tsp of Salt to the water and add the Spaghetti. Cook the Spaghetti until “Al dente”
Squash the Garlic with the blade of a knife to just bruise it.
Melt the butter in a pan and fry the Pancetta and Garlic for about 5 mins, until the Pancetta is golden and crisp. When Pancetta is cooked remove the Garlic from the pan.
Leave the Pancetta on a low heat.
When the Spaghetti is cooked drain it off (do not throw Spaghetti water away) and add it to the Pancetta. Don’t worry if a little water goes into the pan with the Pancetta.
Mix most of the 2 cheeses with the eggs, keeping a small handful of the cheeses back for sprinkling later.
Now take the Pancetta and Spaghetti off the heat and quickly pour in the egg and cheeses.
Uusing either a fork or tongs mix the Spaghetti, Pancetta and the cheeses until it thickens and everything is coated, but do not let the mixture scramble.
Add extra Pasta water to the mixture to keep it saucy (several tablespoons should be ok) you don’t want the mixture wet, just moist. season with a little salt if needed.
Serve Carbonara immediately on warm plates with a sprinkling of the remaining cheese mixture and grated black pepper.
If the dish does dry out before serving, splash some of the remaining pasta water and the glossy sauciness will be revived.
Enjoy!!!!!

How about broiled Parmesan Tilapia?
Flavorful recipe that is easy and done in minutes! The fish is broiled with a creamy cheese coating for an impressive flavor and texture. My wife's favorite dish in the world! Takes about 10 minutes start to finish...Goes great with fresh green snap beans or garlic smashed potatoes!
INGREDIENTS
1/4 cup Parmesan cheese
2 tablespoons butter, softened
1 tablespoon and 1-1/2 teaspoons mayonnaise
2 tablespoons fresh lemon juice
1/8 teaspoon dried basil
1/8 teaspoon ground black pepper
4 tilapia fillets
DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Try this - it's quick and easy and one of my favorites!
Spinach and Tomato Tortellini
1 16 ounce package cheese tortellini
1 14.5 ounce can diced tomatoes with garlic and onion
2 cups chopped fresh spinach
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 tablespoons diced fresh basil
1 teaspoon minced garlic (I always use more!)
2 tablespoons all-purpose flour
3/4 cup milk
3/4 cup heavy cream
1/4 cup grated Parmesan cheese
Cook the tortellini, according to package directions.
While you get the tortellini going, combine the tomatoes, spinach, salt, pepper, basil and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
In a medium bowl, whisk together the flour, milk and cream. Stir this mixture into the saucepan along with the Parmesan cheese. Heat through, then reduce heat to low, and simmer until thick, about 2 minutes.
Drain the tortellini, but do not rinse, then pour them into the saucepan with the sauce. Stir to coat, and serve.
Hope you like it!
