Del Monte in particular. The jars are more expensive but taste better. Both have "light syrup", is one healthier than the other?

Both canned & jar maunfactured foods should in theory have the same nutritional content. The better produce is usually put in jars as you can see it directly so it has to be a better quality all round, canned goods will be a slightly lower quality as you do not purchase them from actually looking at the produce just the label on the can. However it is like buying fresh food that isn't quite cosmetically perfect, the outer doesn't matter so long as the fruit inside is fine.
The point of the process is to stop spoilage & to preserve the the nutrients therein.
There is little difference in the actual processes for canning compared to jar foods, both require a high temp low time (HTLT) process to kill of any bacteria before been sealed.

Has nothing to do with health, has everything to do with taste!!!!!

The cans can sometimes taste like the can, anything in a jar tastes much better. Glass doesn't add any kind of off taste.

They supposed to be the same. A can is just a cheaper and sturdier container. It made a revolution in food preservation when it was invented.

They're probably about the same nutritionally. Frozen fruit would beat them on nutrition, and fresh would beat frozen. Whether it's in glass or metal, it's still been canned.
