You want a tender apple for this salad, not a chewy apple like a Granny Smith. I would go with a Braeburn, Rome, or McIntosh, if you can find them that aren't beat up, they bruise easily. A red delicious is only good to look pretty, it doesn't have enough apple flavor to do much of anything with. Winesaps are great, and my preferred cooking apple, but they are hard to find. A peeled Mutzu (or Crispin, to some) would be excellent also, if you can find them. The peels tend to be tougher on them though, so they'd have to be peeled. That would be a good idea for the Romes too.

Waldorf Salad (With Gala apples )
1/2 cup walnuts halves
1/2 cup non-fat yogurt
2 tablespoons light mayonnaise
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon honey
1/2 lemon, zest finely grated
Freshly ground black pepper
2 large crisp apples, such as Gala
2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
1/4 cup golden raisins
1/2 lemon, juiced
1 head Boston lettuce, trimmed, washed, and dried
Preheat the oven to 350 degree F.
Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

Which is a recipe that substitues the mayo for yogurt. Which is my preference, since I dont eat Mayo.
However I have heard a few people say that when making a larger dish they use a combination of 2 or even 3 apples for taste and presentation.

It depends If you want a softer, sweeter apple, go for the gala
if you want it to have more substance, green apples are perfect
if you want substance AND sweetness, red delicous
ALWAYS:
If you cook them for a long period, DO NOT USE GALA
If raw, don't use green unless ur usin a mix or you want the sour flavor
Raw is best for gala
short cooking time for red
long cooking time for green
Figure out whcih one works for your recipe (so many different ones!)

I love Macintosh they are tart and sweet. I use for eating fresh and for apple dumplings.
A golden delicious is good for baking.
**Sometimes when I make a salad I like to use two different kinds so I have added color. You could use both of these, and have a yellow and red.**

I have tried using the tart varieties, I HATE how the flavors clash and compete with the dressing and other ingredients. They are too firm for this salad. MacIntosh are great candidates. I use a little lemon juice to prevent them from browning.The response above me says it best!
