If you take any basic recipe for brownies and substitute apple sauce for the oil, your brownies will be a lot moister. And don't worry, it doesn't taste anything like apple sauce!

"Chocolate Brownies"

Ingredients-
3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsweetened cocoa powder
3 tablespoons peanut butter


Preparation-
Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7 inch baking pan.
In a medium bowl, beat sugar, oil, and eggs until light and fluffy. Combine the flour, baking powder, salt ,and cocoa; stir into the sugar mixture. Blend in the peanut butter. Spread batter evenly into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, until edges of brownies start to pull away from the sides of the pan. Cool before cutting into bars and serving.

This is the recipe my mom used when we were kids. I've now adopted it as my own, but it's moist and AMAZING. My only warning is not to substitute Splenda in any of it. It really needs the sugar to keep it moist.

Brownies

Ingredients:

1 stick of margarine or butter
1 cup sugar
4 eggs
1 cup plain flour
1 teaspoon baking powder
1 teaspoon vanilla
1 lb. can chocolate (Hershey Syrup)

Mix and pour into pan 10x14
Bake at 350 degrees for 25 minutes

Icing

1 stick margarine or butter
1/3 cup evaporated milk
1 cup sugar

mix and cook 2 minutes - remove from heat and add 1 6 oz package of chocolate chips

Pour over cake as soon as taken out of oven

CARIBBEAN FUDGY BROWNIES

1/2 cup butter
3 ounces unsweetened baking chocolate
1 1/4 cups sugar
1 teaspoon vanilla
1 teaspoon spicy or dark rum
1/8 teaspoon Jamaican allspice (optional)
2 eggs
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Pre-heat oven to 350°F.
Grease 8 inch square baking pan, greasing only the bottom and leaving the sides ungreased.

In a medium saucepan, stir together chocolate and butter over low heat setting until smooth, about 5 minutes. Remove from heat. Stir in sugar.

Whisk in eggs, one at a time, stirring well after each addition. Stir in flour, baking powder and salt, vanilla and rum; stir only until mixture is smooth and all ingredients are combined.

Spread mixture into baking pan.

Bake for 25 to 35 minutes or until brownies just begin to pull away from sides of pan. Watch carefully near later stage of cooking period to prevent overbaking or brownies may become dry. If your brownies consistently are dry or overbaked, try reducing oven temperature by 25 degrees.

Allow to cool before slicing into squares.

Note: To make a double batch, double all ingredients and use a 13x9 inch baking pan. Bake 35 to 40 minutes.

VARIATIONS: Add one of the following - 3/4 cup walnuts, pecans, macadamia nuts, raisins, chocolate or peanut butter chips, or sprinkle chocolate chips over top just before baking.

If you like your brownies a little lighter, add 1/4 teaspoon baking soda and a teaspoon of molasses.

Ultimate Chocolate Brownies 16 brownies Prep: 10 minutes
Ingredients
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/2 cups Vanilla Sugar (below)
1/4 cup unsweetened cocoa powder
6-ounces candy-coated semisweet chocolate pieces; miniature chocolate-covered mint creams, quartered; any chocolate-covered candy bar, coarsely chopped; or a combination to total 1 cup
1/2 cup coconut, toasted nuts, or miniature marshmallows

Directions
1. Layer ingredients in order listed in a 1-quart glass jar, tapping jar gently on the counter to settle each layer before adding the next one. If necessary, fill any small gaps at top of jar by adding additional candy, nuts, or miniature marshmallows. Secure lid. Include recipe directions for preparing brownies with gift.

2. Recipe directions: In a large bowl combine 1/2 cup butter, melted and cooled, and 2 slightly beaten eggs. Add jar contents, stirring gently until combined. Spread in a greased and floured 8x8x2-inch baking pan. Bake in a 350 degree F oven for 35 minutes. Cool in pan and cut into bars. Makes 16 brownies.

Vanilla Sugar: Filla quart jar with 4 cups sugar. Cut a vanilla bean in half lengthwise and insert both halves into sugar. Secure lid and stor in a cool dry place for several weeks before using. Will keep indefinitely. Makes 4 cups.

Make-Ahead Tip: Prepare Ultimate Chocolate Brownies as directed through step 1. Store up to 6 weeks at room temperature or up to 6 months in the freezer. (Or prepare brownies as directed through step 2. Cool completely. Arrange in layers separated by waxed paper in a freezer container. Seal, label, and freeze up to 3 months.)

To serve: Use dry mixture to prepare brownies as directed in step 2. (Or thaw frozen brownies in freezer container at room temperature for 15 minutes.)

I do! Use a basic box mix and add 1/2 c sour cream and 1/2 c choc. chips into the mix. For more gooeyness, top with more chips and bake.

3. In bowl stir together flour and baking soda. Add stir-ins. Add flour mixture to chocolate mixture; stir just until combined. Stir in dark chocolate pieces and nuts. Spread batter in prepared pan.

4. Bake 35 minutes or until edges are set and begin to pull away from sides of pan. Cool in pan on wire rack. Spoon chocolate Drizzle across top. Cut into bars. Makes 16 brownies.

5. *Sweet stir-ins: Add 1/2 cup dried fruit soaked in sparkling wine for 30 minutes, drained, and chopped; or 3/4 cup candy-coated peanut butter pieces to batter.

Spice stir-ins: Add 1 tsp. ground cinnamon or ground ancho chili powder; 2 tsp. orange peel; or 1 Tbsp. expresso powder to flour mixture.

6. **Chocolate Drizzle: In bowl stir together 1/2 cup softened powder sugar, 1 Tbsp. unsweetened cocoa powder, 1/4 tsp. vanilla, and 1-1/2 tsp. milk. Stir in additional milk, 1 tsp. at a time, until icing is drizzling consistency.
