Definitely whole or refried black beans. They have a lot more flavor than regular old pinto beans. More fiber and protein too.

For tacos, I vote the mighty pinto bean. They taste better from dry beans, but you could always buy a can of them if it's short notice.

To make your own, boil them as it says on the directions (add plenty of salt). You can use them as it or blend them in a food processor and make some refried beans. I fry the blended bean paste in bacon grease for a really good flavor. Spread it on a corn tortilla and add toppings!

For a twist, I definitely recommend trying chalupas. I'd never heard of them (except in Taco Bell--ugh) until I lived on the Mexico-TX border. Buy soft corn tortillas at the grocery (even Wal-Mart in IL has them). Heat some oil on the stove and fry those tacos whole and flat. While they're hot, spread the bean paste on them and some cheese and your choice of veggies. Pick it up and eat it like a mini-pizza. This is absolutely my favorite food! (Also, frying soft corn tortillas is a way to make killer tortilla chips.)
