Most VW engines (save the old 2.0 non turbo four) require the usage of oil that meets VW requirement 502.000, except for diesels that must meet the requirement of VW 504.000.
There is a service circular issued a few years ago about which oils VW allows usage for. The Castrol that is used in the dealership for requirement 502.000 is especially blended to meet the requirements of VW, Audi, Porsche and BMW and the oil container is labeled as such. I'm not sure about the Mercedes requirement.
Always use a high quality filter with a anti drain back valve; most name brand filters are built this way, I'm not so sure about the "bargain brands" that are out there.

I've never heard of the requirement of the dealer doing the oil changes to keep the warranty.
Check your warranty paperwork closely.
If it were a used car out of the factory warranty, the dealer could put almost anything in the warranty agreement they want. But it would have to be in writing.
