At pottery Barn or probably other retailers they have these locket christmas ornaments that are engraveable. You can get one for each of the different people in the family, put pictures in them of those people and hang them on a small christmas tree. like a "family christmas tree" It's a great idea that I'm sure they will love. To make it even better and if your quick you can do it by thanksgiving so they can enjoy it through this christmas season. Then after the holidays they can each take their ornament home and each year the mother in law can bring out the tree, everyone can bring back their ornament with a new picture and every christmas you can add to it, and change the pictures for years to come. I know my inlaws love family related gifts! It's genious! ( I just thought of it ) ( :

maybe just a nice evergreen arrangement for his folks. not personal but always appreciated. or a bottle of wine. the sis - music, gift card,scarf/hat combo or maybe a fragrance basket from someplace like bath and body works. those are always fun. grandma's a tough one though. a light fragrance maybe? since you're engaged, why not shop together for them all and put both of your names on each gift?
