Dinosaurs do appear in the Bible. For one example, see Job 40 and 41. Both describe dinosaurs.
The whole of chapter 41 of the book of Job is given over to describing the terrifying beast Leviathan, whose description bears absolutely no likeness to a whale.
Just as one example his back is described as having 'rows of shields tightly sealed together.' Whales have no scales and Job says no spear or javelin or hook can touch him.
The actual word dinosaur is a 19th century creation.
So, did you want an answer to your question or a nasty comment about the Bible?

A couple theories:
1) When God created the Earth, he created it with a history.
2) Genesis does not describe the creation of the world but rather the reforming of the world. There was already something there, from what verse 1 says. Thus dinosaurs could have existed in the first earth.
3) Each "day" represented a timespan, possibly hundreds of millions of years. Perhaps they were not even the same length of time.
4) The Biblical account of creation is not true and various scientific theories may make more sense.
I tend to believe a mix of 2 and 3...though my views on this are not set in stone.

God created the animals. He just didn't make a distinction between animals. The Bible does talk about Behemoth in the Book of Job and he was definitely a dinosaur.

Why are people so concerned with dinosaurs? There are millions of other species besides the dinosaurs which lived many years apart from dinosaurs that the Bible doesn't mention. Creationists just like to say dinosaurs were in the Bible as if dinosaurs were the only extinct animals that ever existed in the earth's several billion yearlong natural history.

Six days is an allegory. Like much of what is in the Bible, it is allegorical, metaphorical.
The Bible does speak of "giants in the earth."
It could be that the ancients who saw dinosaur bones assumed there had been giants in the earth at some past time.
