********OLD FASHIONED "BISCUIT TACOS"
2 cans biscuits
8 tbsp. flour
Open biscuits and press 2 biscuits together. Roll out in flour to 3/4 inch diameter. There should be 10 biscuits ready to fill.
FILLING:
2 lbs. ground beef
1/2 c. chopped onion
2 c. shredded cheddar cheese
Salt & pepper
Brown ground beef and onion, drain. Reduce heat. Add cheese to beef and stir until melted. Remove from heat. Heat 2 cups shortening. Fill biscuit shells with meat and cheese mixture. Fold in half moon and pinch together. Drop in hot grease and brown on each side.
SALAD MIXTURE:
1/2 head lettuce
1 tomato, diced
6 to 8 green onions, chopped (stems & all)
Toss salad mixture. Open biscuit taco and fill with salad mixture and favorite taco sauce. Serves 10. Absolutely delicious! Eat and enjoy!
**********3-BEAN HAMBURGER HOT DISH
1 lb. hamburger
3/4 lb. bacon
1/2 c. onion
2 cans Navy beans
1 can chili beans
1 c. ketchup
1/4 c. brown sugar
3 tbsp. vinegar
1 can kidney beans
Brown hamburger and onions; drain. Brown bacon crisp and crumble. Mix together all ingredients. Can be made in a crock pot, cooking for 4 to 9 hours or regular oven for 1 hour.
****QUICK HAMBURGER RED BEAN DINNER
1 lb. ground beef
1 med. onion
1 bell pepper
1 pkg. Lipton's onion soup mix
1 c. rice
1 can red beans
Salt and pepper to taste
Brown beef in skillet; drain. Add onion and bell pepper, finely chopped, and stir in red beans. Add soup mix and simmer 15 minutes. Cook rice; salt and pepper to taste. Serve burger mix over rice
**********CHICKEN & DUMPLINGS
2 cans of can butter biscuits
1 can Cream of Chicken soup
3 bouillon cubes
1 tsp garlic salt (optional)
3 to 4 boneless chicken breast
Boil chicken breast until done (20 minutes). While chicken is boiling, prepare dumplings.
Roll out can of biscuits on a work surface sprinkled with flour. Make them as flat at you can and check that they have a light coating of flour. Set them aside.
When chicken is done, remove from pan and set aside to cool, saving the water in the pot that the chicken was cooked in. Skim any foam off the surface; you want to make sure you have a good bit of water in the pot, about 3/4 full. If water has boiled off, then just add more. Bring to a boil and add 1 can of Cream of Chicken, 2tbs butter, 3 boullion cubes, 1 tsp of garlic salt. Stir well
Over medium high heat, begin adding dumplings. Tear them into quarter size pieces and drop into the boiling water.
Hint: The less you stir the better they are, so after you add all of them, reduce the heat to medium setting, stirring only occasionally. Add chicken back into pot, tearing into small pieces. Cook until the dumplings are soft; this usually takes 30 to 45 minutes. I promise these are the best dumplings you will ever eat!. Enjoy!

Buy a roast for about 2.69 per pound which in your case would probably be aroung $6.00 for a package, put it in the oven, make mashed potatoes either fresh or instant, add to the mashed potatoes some butter, cream cheese and top with shredded cheese, if the kids like green bean open a can or baked beans or corn., you will have a great meal, make the roast in the oven then use electric knife and slice and use a can of cream of mushroom. Yummy! buy chicken cut up and add a can of cream of chicken make some white rice, and a can of vegetable and for dessert some pudding. Then there is different type of hamburger helpers/ frozen lasagna and pizza, salads.

I like lasagna (I make mine homemade but you can buy frozen). If that doesn't work there's always macaroni and cheese, veggies, and a biscuit. All kids love mac n cheese and I make green beans or veggies with it. I get a can of either and pour it right in the pot, add pepper, a little salt, and some butter (I personally use the real thing) and turn the heat on high. I let it boil until most of the water is gone and the butter is all melted and you stir it up and it's got great flavor and doesn't taste canned at all. My son eats this up and he's 3. You can get a can of green beans and mac n cheese for less than $3.00 probably. Add some biscuits (my son loves those too) and you've got a cheap meal for everybody.
P.S. We're vegetarians so not having to buy meat saves some money on the food bill. :-D

Whatever you do with pasta or bread, do whole wheat pasta and bread as it's more filling and better for you all. Yes, the pasta is a little more expensive sometimes, but worth it. Don't feed your family junk just to save a buck, and you and your family will get used to the different taste of whole wheat. I buy the canned Hunt's tomato sauce as it's cheap and any tomato sauce will be nutritious. Add garlic bread by spreading whole wheat bread with butter and sprinkling some garlic powder or salt and some parsley for color, then toasting in the oven. Eat meatless meals a few times a week as that will save quite a bit in the long run, and make your meat stretch by using it in casseroles, salads, etc, where it's not just standalone meat. Don't forget your veggies! Frozen veggies are nice and cheap. Your kids will get used to those too, if they don't already eat them. I like to put butter and seasoned bread crumbs over my veggies like peas, green beans, corn. Or here's where you can make great use of cheese. My mom would make a cheese sauce (use the basic white sauce recipe on the back of any cornstarch box and add sharp cheddar cheese at the very end) and we'd have it over broccoli and baked potatoes (we'd mash up the potatoes anyway and break it up so the skin was in smaller pieces). Buy sharp cheese because you will need less of it to get the same flavor, but it costs the same per ounce as mild. Good luck.

I grew up in the Midwest in a large family and one parent working, so mom got very creative as we all grew older. She used to make chili with bean and a pound of hamburger and a couple quarts of tomato sauce and a quart of water, then added half a package of elbow macaroni and add onion, garlic and chili powder to taste. We called this Chili Mac, it was awesome and will fill an army's stomach.
Another simple idea is what we called open face sandwiches. It was bread spread with a mixture of 1 lb of ground beef, (pork, chicken or turkey work also) a couple eggs, salt and pepper and a cup of oatmeal and a couple table spoon Worcestershire sauce spread on top. lay your single slices out on a broiler once you spread the mixture on them and broil for a few minutes. We liked to top them with either katsup or horseradish. Makes a pound of burger and a loaf of bread go a long way.

Here are a few of our faves:
Vegetable soup with grilled cheese
Breakfast at dinnertime
Spaghetti with meat sauce, garlic toast, and green salad.
Potato cheese soup with grilled chicken and english peas
You can buy chicken when it goes on sale and have some cheap meals. It freezes well if wrapped properly.
If you make meat sauce with ground turkey it will be cheaper.
Any dish with ground meat and sauce and some type of pasta and cheese feeds a lot for a little, and is usually quite good.

Lumpy Pizza
1 jar of pizza sauce
1 can of butter tasting FLAKY biscuits
4 cups of mozzarella cheese
1 package of ground sausage cooked in a skillet
or whatever topping you may like
1. Heat oven to 375°F. Separate biscuit dough into 8 biscuits. Cut each biscuit into 8 pieces; place in medium bowl. Add pizza sauce and 2 cups of the cheese; toss to coat.
2. Spread mixture in ungreased 13 x 9 inch glass baking dish. Top with sausage or favorite topping and remaining 2 cups cheese.
3. Bake 22 to 28 minutes or until golden brown and bubbly.

You can make cheeseburger mac, just mix a bit of browned ground beef or turkey into a box of prepared mac and cheese. Add some ketchup, mustard and relish to taste.
Tuna casserole: One can of tuna, one can of cream of mushroom soup, 1/2 a pound of frozen peas and 1/2 a pound of cooked macaroni. Mix and bake at 350 for 45 -50 minutes. My mom used to top this casserole with crushed potato chips.
We also like to get pre-made ravioli and a jar of spaghetti sauce. Put the ravioli in a baking dish and top with the sauce and mozzarella cheese Bake until hot and bubbly.

Something kids will LOVE is Bagel Pizza's. Buy a package of cheap bagels, some pizza sauce, cheese and pepperoni... cover the hole in the bagel with a pepperoni then add the sauce, cheese and pepperoni and bake until cheese is melted and golden. Much better than the box kinda, and I can make a dozen of them for under $6.

Mac and cheese. Add a can of drained tuna and for a different taste, add a can of cream of mushroom or cream of chicken soup. Or, make "chicken" spaghetti. Cook pasta of your choice and add a family size can of cream of chicken soup, undiluted. You can add chunks of chicken or just serve as is. For garlic toast, use cheap hot dog or hamburger buns, it's delicious! Another one is cooked macaroni with cooked ground meat, add one packet of onion soup mix and a can of tomato juice. You can add a can of your favorite veggie or serve veggie on side. Tastes good, goulash like in taste. Add cheese if you want. (Use your imagination, you will be amazed at what you come up with!)
