just about all of it except bone and fat.... I like to make a nice soup with the left overs.....

Depends on how good you are at picking the bones. I usually buy a turkey in the 16-18 pound range because we love left-overs. When I am done I boil the carcass to make my smoky Turkey Wild Rice Soup and I literally pick every bit of meat off.

When all is said and done the bones remaining are probably a little over a pound, maybe a pound and a half, not counting the skin. Hope that's helpful.

It all depends on the size of your turkey. You should figure about one pound of turkey for every guest. This includes the bone weight. If you want a nice amount of leftovers, then get a turkey a couple pounds bigger than the suggested amount.
