Favourite turkey stuffing in the UK may differ slightly from ours because we use Stove Top Stuffing as a base.Take the giblets cook them well .Save the water. In a fry pan saute a small onion. Take cooked giblets and dice them as small as possible. Place stuffing in a bowl, add sauted onion and drippings, incorporate giblets, add giblet water so stuffing is slightly moist. Then stuff the turkey. The natural juices from the turkey will make the stuffing very tasty. It tastes better every year.

I don't advise to stuff any bird. The reason for this is the chance of the stuffing not coming to a safe temp before the bird is cooked. (min temp for stuffing in a bird is 160) the best method is to cook the stuffing on the side (in a separate vessel) this has two advantages, 1 the stuffing will be sure to reach temp and 2 the bird will cook faster. Look to Food Network for some good recipes.

My favorite to go with my tofu turkey is herb stuffing. It simple..whole wheat day old bread..dried in the oven then crushed up to make crumbs like so.. then add herb seasoning...celery..onion..carrot...a bit of salt and pepper and I wet it with my own vegetable broth I make. Then I stuff it in my tofu turkey. Yum!

It would go good with a real turkey too...but I prefer it in a tofu turkey 10 to none. LOL.

Our favorite recipe came from a stranger many years ago whom we met in a super market. The best stuffing always includes cooked pork sausage and roasted pecans. Along with good bread crumbs -- a mix is fine -- chopped onions and celery softened in olive oil, add egg, chicken broth, sage, black pepper, and a variety of other items from dried cranberries, apricots, or currents and lots of chopped parsley. We vary it a little each year. It is always good and we always thank the lady in the market who looked like a good cook and certainly was.
