Satan is symbolized as a serpent many times through out the Bible. Possibly because he slithered in quietly and was cautious, and deceived her.
Most people take one or two verses litereally or out of content.

Froma scholarly perspective it is because the author of this particular chapter of Genesis was a storyteller and interested in portraying a scene to the reader. And, later God says that now the serpent may slither on it's belly and be killed by man so perhaps speech was also a skill taken. The serpent was supposed to be one of the most itelligent and yet cunning, deceitful, trickster.
