I think it's either milk or italian dressing. And how do I cook it? I think it is sausage.

I never soak it unless I am making something with it that calls for a marinade. Deer sausage I make the same way I would make pork sausage.

You are suppose to let deer meat soak in buttermilk before cooking it.....It is suppose to help take out the "gamey" taste and i think help it be more tender when cooked. If it is sausage place in a shallow pan with water that almost covers the sausage link. Place a lid on top and let it cook until the center is not pink anymore. If there is hog meat included in the meat it will still look pink when cooked. Good luck! YUM

I've never soaked my deer meat in anything. I always braise it so it's always tender. And with the sausage, even though we killed the deer (hubby shot it), we took it to a local butcher to cut up for us and he put pork fat in the sausage (which, I understand, is what they all do).

If the deer was shot quickly, the flavor of the meat isn't strong. If the deer (or elk) didn't immediately die, the adrenalin kicked in and the meat will be strong. If when the deer was cleaned, the intestines were cut, the meat will take on a nasty taste - especially if the gall bladder is ruptured.

But I've never had a bad piece of deer meat and have never soaked it in anything. Just cook it as you would round steak because the meat is very very lean.

I've noticed with bear meat, depending on what the bear ate (berries or fish), the taste of the meat will vary. Maybe the same holds true with what the deer have in it's diet.

my husband's uncle always marinated the meet in beer before seasoning and cooking. ~*-*~
